Orange Chutney Salmon

I used the grill for the first time this year! Yeah! This is one of my favorites to grill...

Stir together
2 Tbsp sugar
1 1/2 tsp grated orange peel
1 tsp salt
1/4 tsp pepper

Rub this mixture on salmon. Place salmon on baking dish sugar side up cover and chill for 8-24 hours. (I like to get a big skinless salmon fillet from costco. I ended up tripling this mixture to cover the whole fillet)

Chutney
1 tsp shredded orange peel
2 oranges peeled, sectioned and chopped
1 cup pineapple (fresh or canned) drained
2 Tbsp fresh cilantro, finely chopped
1 shallot, finely chopped (I use a couple of green onions)
1 small jalpeno pepper seeded and chopped (I didn't put this in)

Mix together an let chill until ready to serve, up to 24 hours.

Grill salmon wrapped in tinfoil. Watch carefully! I have a Williams Sonoma meat thermometer that tells me when it's done!
